You could go out for just knights and camel archers. I think that's genuinely a pretty strong army composition. Just mass knights and camel archers. Because realistically, what do you want to make against the knights? You're going to want to make crossbows, but crossbows get absolutely obliterated by camel archers. The archers also die to the knights.

If you destroy the opponent's House of Wisdom, you deactivate the Golden Age, which loses them resources, and you also stop them from aging up.

You can deactivate the opponent's Golden Age by destroying their houses within range of the House of Wisdom.

Desert raiders can kind of hold Ghulams. You should still lose, but you lose slow, not fast.
