The match-up is relatively hard for ayyubid. The Ridari is a solid cavalry unit, and you can make up for the camel unease by researching the Rampire upgrade, which gives +3 damage. With that, you can completely mitigate the camel unease bonus.
The Camel Lancers have a much longer charge duration and a shorter cooldown, which means there is no escape across an extended chase for any other cavalry unit.
Archers from the macedonian have the ability in the feudal age to ignore two armor, so can actually trade out positively against the Camel Lancers.
You'd think camels are good against Riddari, but Riddari are the best castle knight — they are faster, have faster attack speed, higher base damage, and higher health — so they win.
If your opponent is going straight Riddari, Ghulam look incredibly questionable.
