Going for the Dervish wing can negate Mongol damage, healing your units so Mongols has to invest more to get damage done, allowing you to go fast Castle or sit back and deter attacks.

Desert Raiders can snipe out spears, kite them away, and keep up with traders to do good damage.

If you can spare a Desert Raider or two, you can raid Mongol trade to force their units out of your base to defend it.

With enough Mangonels, Ayyubids can torch anything that comes out of the Khaganate Palace and torch down defensive springald emplacement towers.

Ayyubids are one of the best civilizations at dealing with the Mongol Imperial Age rush because of the Mangonel.
