Byzantines can already start making some Limitanei early on to defend against the King.
Cataphracts will absolutely butcher massed Longbows.
There is nothing the English can do in feudal age against Varangian Guards. However, a large clump of Longbows can grind down Varangians if you only have one or two, so thin out the Longbows first.
When facing English longbows, the problem for Byzantines is their limited production. Byzantine longbows are a great auxiliary unit, but it's not enough to just play one-on-one.
Longbows are slower than normal archers, making them easy for Varangian Guards and Javelin Throwers to catch up.
Horsemen are great because their movement speed lets them push the King away if he doesn't have any support.
While the English player steals deer, the Byzantine can prioritize berries for the extra olive oil, moving onto a second berry bush and ignoring the deer.
Against a heavy English Man-at-Arms composition, Varangians are fine but you really want more armor-piercing power.
Against English longbows, you need to put your walls far out there to make sure those resources are safe, because they can just shoot over them.
Castle age is not necessarily going to give you any units that can deal with what English has on offer; when you have this many longbows, you can take on a man-at-arms, you can take on a knight or a Cataphract in this case.
