You can't realistically go for castle age in this matchup just because what do you get from castle age? What does your opponent get from castle age? You already get knights. You already get the full army composition. The only way you can really pull off a castle age is if you're majorly ahead in one way or the other.
The Knights Hospitaller landmark provides villagers with +30% health and +10% movement speed, helping them survive early French knight raids.
Knights Templar villagers do not need a lumber camp to drop off wood, so you can hide them in stealth forests or scattered trees to avoid French knight raids.
The Fortress from the Angevin Empire commandery provides an influence that increases archer range, helping Knights Templar archers outrange French knights and archers.
Combining Textiles with the Knights Hospitaller health bonus makes Knights Templar villagers extremely tanky against French knights.
The Angevin Empire commandery also grants +30% health to Docks and Fortresses, making them much harder for French siege to destroy.
