One of the unique upgrades from King's College (Scholar of Vassals) gives knights +5 damage against heavily armored units. It's a very affordable technology in early Castle Age, and that damage is very effective against Golden Horde's men-at-arms and Torguuds.

Lords of Lancaster die so fast to crossbows; they cannot stay alive long enough to make that extra health effective.

The Torguud are very tanky, but they barely do damage — like 10 damage. That's not a lot. It's almost Hobelar level of damage. So the Hobelars can for the most part kind of ignore them. Makes it very difficult for the Torguud to be a good enough meat shield to keep the backline archers safe.
