Heavy spearmen are very effective against Byzantines because they lack a good counter; crossbows are really the only option, and they may not have an archery range.
Knights Templar can trade their cheap units efficiently against Byzantines' expensive Cataphracts and Javelins.
The Cheirosiphon, the Byzantine ranged ram, lets your units attack more safely because it outranges Town Centers, especially forward second TCs.
