Knights Templar having the option of going for heavy spears means they already have a response to mounted samurai pretty quickly and you can match the age up in a similar fashion.
Crossbows aren't really going to do much to Onna-Bugeisha. They fall very quickly to archer fire, but crossbows have higher base damage but slower rate of speed and are more expensive, so the trade-offs favor archers because Onna-Bugeisha are so inexpensive.
Teutonic Knights are a pretty good unit into Japanese. They're slow and expensive but tanky, and against Onna-Bugeisha they hold their own.
But up against Japan in particular, I mean the Chevalier they're very cheap, not strong, but cheap, so you can mass them up quickly. But if the Yumi number starts climbing, with that low ranged armor and their speed, they're going to kite the Chevalier so easily. It can become a problem.
The problem with Angevin spears is while they don't die to Yumi, they can't kill Yumi either.
When up against Mounted Samurai, as Knights Templar you should be scared to invest in pilgrims because they can be shut down quickly.
Chevalier versus Samurai: Chevalier will win, but not as much as you'd think, because the Samurai's deflective armor offsets the Chevalier's best hit, the initial lance charge.
