Going for Genitours in Castle Age tends to work well against Order of the Dragon because they've got fewer units overall, so being able to counter their ranged units with mounted javelin throwers works out very well.
Chevaliers make a lot of sense for early raiding, but realistically against Order of the Dragon, because they have the strongest spearmen in the game, you don't necessarily want to go for Chevs.
Knights Templar gets more value from going to Castle Age than Order of the Dragon does, because KT's units scale better with the upgrade.
Going for mass Hospitaller Knights against the Order of the Dragon: against normal men-at-arms, it's really, really good. Like, normal men-at-arms just cannot touch the Hospitaller Knights. They out-heal easily. But the gilded men-at-arms, they just thump when it comes to the damage numbers, so hard that no amount of healing is going to be able to really deal with that.
17 crossbows is pretty much enough to two-shot those gilded men-at-arms.
The Szlachta Cavalry is like one of the strongest units to make against Order of the Dragon. The attack speed debuff on it, it's brutal.
Szlachta is definitely the unit that could win him the game here. Very very high base ranged armor on them. So they'll just get tickled by the gilded archers here.
