Archers from the macedonian have the ability in the feudal age to ignore two armor, so can actually trade out positively against the Camel Lancers.
The Desert Raider does take significantly longer to produce than a Horseman. Desert Raider is classified as a ranged unit, so Horsemen do have bonus damage against them.
The match-up is relatively hard for ayyubid. The Ridari is a solid cavalry unit, and you can make up for the camel unease by researching the Rampire upgrade, which gives +3 damage. With that, you can completely mitigate the camel unease bonus.
The Camel Lancers have a much longer charge duration and a shorter cooldown, which means there is no escape across an extended chase for any other cavalry unit.
Bogmaðr have a piercing ability that ignores two armor on targets, so Ghulam do take a bit of damage from them.
Don't clump your units together; it's really bad against Manjaniq.
Run Blinding is a debuff from Bogmaðr attacks that reduces damage by 20%. It's very effective against Manjaniq and Ghulam, making them worse.
Riddari are insanely tanky but don't heal. Ayyubid's Dervish army rejuvenates between fights, even the siege. So Ayyubid wants long fights to wear them down; Macedonian wants hard commitments, not trickle trades.
Mass Desert Raiders is the best answer against Varangian Guards. They have 5 base melee armor, which is a solid amount up against them, they tech rather quickly, and they've got solid melee damage.
If Macedonian gets a fast Hippodrome horseman timing with +2 extra damage, they can beat Desert Raiders by offsetting the loss of damage and still dealing double damage.
Manjaniq's incendiary shots can't be dodged even by spreading infantry; you'll take a ton of damage regardless.
Macedonians struggle against fast castling and healing civs. Ayyubid is both, so fast castling and using Dervish healing denies Macedonian their runestones, depriving them of damage, move speed, and range buffs.
Once Ayyubid scales to three, four, five Manjaniqs, you can take down mass infantry very effectively with the incendiary shots.
Camel Lancers are less tanky than standard knights, while Macedonian Ridari are more tanky.
