Up against the Hobelar and Spearman as well as the Lord of Lancaster spam, you would be totally fine just making only Gilded Spearmen or even Gilded Men-at-Arms; you could just make those units and you would be able to win the fights there.
Burgrave Palace mass Men-at-Arms can be tough for House of Lancaster to deal with; Yeoman have more movement speed and can kite, but they do very little damage to Men-at-Arms, so they won't kill them quickly.
