Clean up the lower health knights and make sure they do not get healed back up.
You have to remember the civ he's playing does nothing against horsemen like the Zhuge Nu with their short bows. Because they only have five damage and you mitigate a lot of that.
Add a third ram; often people stop at two and it makes it easy for English to narrowly survive. Break that TC quickly.
With Abbey of Kings healing, you cannot take pot shots or short trades; you need to commit to killing units outright.
English Farms cost only 37 Wood; raiding them is not very impactful.
Zhu Xi's Palace Guards have less armor than standard Men-at-Arms; longbows trade better than expected against them because of higher base damage.
Remember the King from Abbey of Kings moves quicker than the Scout. It makes the Zhu Xi player waste time and resources trying to hit the King.
