Especially when you're in a matchup against the French, where food throughout feudal age can become a limiting factor, you definitely want to have the ability to get the deer in safely inside of your base. It's not really realistic with China or Zhu Xi to move out onto the map because you want the supervision with your Imperial officials there as well. So, the best choice is to go for the pro scouts play for sure.
The whole point of your horseman is that you're forcing the knight to stay in the base, forcing your opponent to not be able to send the knight to where your villagers are.
Zhu Xi's Legacy in this matchup wants to go for pro scouting because deer are super important and they die in their farm transition most often. When your opponent has knights, being out on the map never feels good, so pro scouts is a logical conclusion.
With Zhu Xi, early compositions of Zhuge Nu and spearman can be too slow to catch French knights.
When fast castle Zhu Xi's Legacy plays up against French, they just aren't in a position to mass up enough units and ultimately lose out with their castle age advantage up against the feudal age knights.
Typically, we see just the French in general putting up a lot of aggression very early on in the field as they can just pump knights immediately. Zhu Xi's Legacy when they go for pro scouts, they'll make a minimum of like a couple of infantry units, some Zhuge Nu, some spearmen just to have some semblance of map control, be able to contest the pro scouting a little bit, but then eventually they want to go for their own fast castle age, relatively fast castle age in order to be able to also pump out their knights as quickly as possible.
When you are in a civilization match like Zhu Xi's Legacy or China versus French, you do have to open with that barracks most of the time and it does delay that pro scouts just a bit.
